Thanks to its simplicity and the fact that it requires no cooking devices it's perfect for those moments when you want a quick, nourishing meal without the hassle of turning on the oven. I often make extra for later, providing a convenient and healthy option during my creative bursts when I don't want to interrupt my art flow.

Recipe Deets: Curry Chickpea Salad Wrap:

Discover a delightful vegan twist on traditional curry chicken salad with this quick and easy recipe. The star ingredient? Chickpeas!

Mash hearty garbanzos with crisp scallion greens, plump golden raisins, vegan mayo, aromatic curry powder, and a splash of lemon juice. The result is a bright, luscious salad that perfectly complements lightly dressed spinach greens and tomatoes, all wrapped in an optional warm flour tortilla. (Feel free to skip heating the tortilla – the magic lies in the simplicity!)

Instructions:

Mash chickpeas with scallion greens, golden raisins, vegan mayo, curry powder, and lemon juice.

Roll the salad with lightly dressed spinach greens and tomatoes in a warm flour tortilla.
